Super Simple Guacamole
This super simple guacamole is quick and easy to make, and is full of healthy fat and fresh ingredients. You can use a mortar and pestle or just smash it all together in a bowl. I like to serve it alongside my Vegan Queso Dip (recipe here) with fresh veggies and tortilla chips.
Depending on the size of your avocados, you might want to add more or less of the other ingredients. Jalapenos vary in the amount of heat they contain, so start with a small amount and add more to taste if you are sensitive to the heat.
Ingredients
- 2 medium-sized, ripe avocados
- 1 large clove garlic, minced or pressed
- 1 medium jalapeno, seeded and minced
- 2 Tablespoons chopped red onion
- 2 Tablespoons chopped cilantro
- 2 Tablespoons fresh lime juice
- pinch sea salt
Instructions
- Place the garlic and salt in a mortar and pestle or a medium bowl. Pound/grind or smash together using the back side of a fork until you have a paste.
- Peel the avocados and remove the large seed from each. Roughly chop the avoado and add it to the garlic and salt. Pound/grind or smash together using the back side of a fork until you have the texture you want. I like mine a little chunky.
- Stir in the remaining ingredients, adjusting each to your desired taste.
Notes
This is best right after it is made, but you can store it in the refrigerator for two to three days. Cover it with saran wrap, pressing the saran wrap down right onto the top of the guacamole. This will help prevent (but not completely stop) the top from turning brown. Stir before serving.
